Turkey and Black Bean Enchiladas

You may notice a trend in the recipes I post here – Mexican (or TexMex) and healthy versions of recipes from sites like SkinnyTaste.com. So it shouldn’t be a shock to anyone that I’m sharing an enchilada recipe from SkinnyTaste…

You can make the same recipe and turn it into a great burrito as well, but if you have the time its worth making the enchiladas. (BTW, the name “enchilada” literally translates to “seasoned or decorated with chili peppers”) .

One bit of warning: The recipe calls for 1-2 Tablespoons of chipotle sauce. This can be a bit much for most people, unless you’re the kind who smothers everything in habanero sauce and smiles. We make it with 1 teaspoon of the chipotle for a mild version, or 2 teaspoons for a bit more kick. Start small and work it up to your taste.
