Everyone knows lasagna was invented by the Italians… but what if it were invented in the south-west United States, home of the Tex-Mex cuisine? I had this variation at the cafeteria in my office building, and threw together a recipe for that weekend’s shopping trip. We think it turned out pretty good!
Ingredients
- 1 pound ground beef
- 1 medium yellow onion
- 1 bell pepper
- 2 cups shredded cheddar cheese
- 16 oz salsa
- 1 package flour tortilla wraps (corn tortillas also work if you prefer, plus that makes it gluten free!)
Preparation
- Brown the ground beef, and remove it to a mixing bowl
- Dice and brown the onion and pepper, then add them to the bowl of beef
- Add salsa and 1 cup of cheese to the bowl
- Stir well
- In a lasagna pan, layer ingredients:
- Line the bottom of the pan with tortillas
- Add half the meat mixture
- Another layer of tortillas
- The rest of the mixture
- Another layer of tortillas
- Top with the remaining cup of cheddar
- Bake at 400′ until the cheese is bubbly.
